Ghost Kitchens have nothing to do with Halloween or haunted houses. They have taken off because of the pandemic and I think restaurants have to find a way to make food that is easily accessible for delivery and takeout.
While there are fewer startup costs and the timeline is shorter, some aspects of launching a virtual brand and opening a new restaurant are the same. “Any restaurant is nothing but trying to figure out solutions, and it’s just shifted in a different way,” says Schlaeger.
Catching Flies With Vinegar
My experience with vinegar is mostly limited to basil vinegar for cooking onions and peppers, or using vinegar to pickle cucumbers. My friend Siobhan Wallace wrote about varietal vinegar for VinePair.
Apart from wine, there is one ingredient we do know is in all vinegars: oxygen. Its presence is necessary, as grape juice can only ferment into wine in an anaerobic environment. But in order for wine to sour into vinegar, it requires the alcohol to oxidize into acetaldehyde, which converts to acetic acid.

Beer in Your Pie, Oh My
I have been hearing good things about Nik Sharma’s new book, The Flavor Equation. When I read about his recipe for sweet potato honey beer pie, I was a little cautious. He puts beer in his pie? Don’t worry, it’s not an IPA. He recommends Negra Modelo which is a dark lager. I wonder how it would be with a stout or porter.
