Oxtail Inflation
Inflation is happening everywhere. I don’t remember the last time that I ate oxtails, but it was probably when I was in Jamaica in 2017. I have never cooked them. My Dad told me that people are selling oxtail plates for $25 in Atlanta. There are actually ten reasons why oxtail is so expensive. This reminds me of Katt Williams’ joke about oxtails in his recent Netflix comedy special, World War III.

What I Do With Blue Cheese
I like to disrupt two summertime dishes with one ingredient, blue cheese. Add blue cheese crumbles to baked beans and you got a new dish. However, if you doing the baked beans for the family cookout, make a separate batch without because some people don’t like you messing with tradition.
Another way to disrupt with blue cheese is to make red, white and blue chicken salad. The holiday that would be perfect for this is Bastille Day. Get a rotisserie chicken. Chop up all the white meat. Put in a bowl. Add salt, pepper, paprika, onion powder and mayonnaise. Add blue cheese crumbles. Fine chop 1/2 cup of red onions. Add to bowl. Rinse about fresh 6 to 8 strawberries. Quarter them and add to the bowl. Mix well Let sit in the fridge for about 30 minutes. Serve with a baguette or water crackers.
