Children Of The Cornbread
It is the 50th anniversary of hip hop, and I have something to say. I grew up listening to a lot of music. My uncle played jazz trombone and traveled with Lionel Hampton. In the late 70’s my Dad owned a record store called The Record Hut in Birmingham, Alabama. Most people would mention “Rapper’s Delight” but the first rap song I heard was King Tim III by the Fatback Band. My Dad brought home the record one day, and I played it on my record player.
What Is Fatback?
Fatback is what it sounds like: the fat from the back of a pig. It is often used in Southern cooking as a way to season black eyed peas, greens and beans. Fatback is also used to make sausage and lardo for charcuterie.
