My Week in Food
I made a breakfast scramble today with egg, old bread, kale, red pepper, sausage and pickled red onions. It was delicious! I learned that Ghana is the number two cocoa producer in the world, but the country doesn’t get the full value of its cocoa beans.
Thick Thighs Saves Lives
There is a chicken wing shortage here in the United States. Wingstop, a restaurant chain, has turned lemons into lemonade by promoting chicken thighs.
On Monday, the restaurant launched a virtual brand called "Thighstop" which serves crispy thighs, with or without sauce. The menu also includes breaded boneless versions of the product.
I personally believe that chicken thighs is the BEST chicken part. Plus, Wingstop is taking the concept of a ghost kitchen to a higher level with the Thighstop virtual brand.
Our Hunger Crisis Is Far From Over
It upsets me to know that half of the states are withdrawing from federal unemployment benefits, which will exacerbate demand from already-straining food banks. The idea that “lazy people who don’t want to work” are going to make the hunger crisis in the United States ever worse.
Mother Waddles, a One-Woman War on Poverty
There are so many people who I have learned about since I started seeking out more food history. Gastro Obscura is a great resource for food history. In 1950’s, Mother Waddles founded the Helping Hand Restaurant. There, she offered home-cooked meals for 35 cents, and people could not afford to pay, then they ate for free.
